Menstruation makes me want to curl into a ball on my heated waterbed and hire a personal masseuse to join me. My only consolation is that the worst will have come and gone by Friday. I want those new wonderpills. - the ones that suppress your cycle so you only have to die four times a year instead of once a month. Maybe I’ll ask my friendly neighborhood OBGYN the next time he’s got me on my back with my ass hanging off the table. We’ll discuss my shy cervix and the possibility of “tampon time” being regulated to four glorious times a years.
In other news...who knew I could cook? I certainly didn’t. The peanut butter sandwiches and potato chips for lunch were getting old. And since I’m trying to be a good citizen and save money (who knew the two could coincide?), I’ve been packing my lunch everyday instead of coming home on my lunch hour. I spent a good hour online last night looking for lunch ideas and recipes. After making a special trip to the grocery on my way home, I finally had all ingredients necessary for this cooking thing.
I made some sort of…oh, I don’t know…dish. Not sure what to call it. I baked it in a casserole dish - does that make it a casserole? Anyway, it’s a mixture of white rice, corn, cream cheese, egg, and shredded cheese. It was surprisingly easy to make considering my minimal kitchen skills and it tastes rather lovely. Keep in mind that I do have a rather bland palette. I don’t like extremely rich or spicy things. Regardless, I’m very much pleased with myself. Could this possibly be a hidden skill? I can’t cook a frozen pizza, but I can cook real food.
For those who like recipes…
Preheat oven to 375.
In a large bowl mix 1/2 cup of chive & onion cream cheese, a large egg, a 15 oz can of corn, 3/4 cup of shredded cheddar cheese, and 2 cups of cooked long grain white rice.
Pour mixture into baking dish and sprinkle 1/4 cup of shredded cheddar cheese on top.
Cook 20 - 25 minutes.
It makes a fairly large amount. Enough to stick in the fridge and provide me with lunch for a week if I supplement it with some fruit on the side. I can’t bring myself to eat breakfast. 7AM is just too early to be putting anything in my mouth other than some hot chocolate (with soy milk ‘cause cows are for calves). No, that’s a lie. I drink milk. But that was a damn good quotation of Prince (from Joint 2 Joint) if I ever saw one. Couldn’t resist.
