Since I don't eat fish, I make this fake tuna that involve chickpeas and various other ingredients meant to simulate the fishy taste of the original--soy sauce, dulse flakes/granules, etc. Anyway, I was reading about onigiri (rice balls) today and decided to make some for my lunch tomorrow.

I cooked the calrose (sushi) rice with just water. No vinegar or sugar like they put in it for sushi.



Then I surrounded a dab of fake tuna with the rice and formed it into a triangle. A strip of nori (dried seaweed) is wrapped around the bottom and up both sides to give you somewhere to hold the onigiri while you eat it.



I'm taking two for lunch tomorrow with some Greek yogurt and walnuts. I stuck the rest away for Friday's lunch and snacking this weekend. Mmm... tasty. If you're a meat-eater, then you can always put salmon or real tuna inside instead of my wacky vegetarian concoction.
