Question for all you bakers out there...

If I made a couple pumpkin pies tomorrow evening and refrigerated them until Thanksgiving afternoon, would the pies still be happy and delicious? I've somehow been roped into bringing two pumpkin pies, a homemade pumpkin cake (with my tasty homemade frosting), and a (fresh--not canned!) green bean casserole to dinner on Thursday. I'd feel more taken advantage of if I didn't actually enjoy cooking. However, my love of cooking does not extend so far as slaving in the kitchen for four to five hours on Thanksgiving morning. Which is probably why I've never invited anyone over for Thanksgiving. Well, that and the fact that I cook Tofurky roast, not real turkey. How can you all eat those sweet birds with the cute gobblers? Anyway, I'd rather knock the two pies out on Wednesday night after work so my kitchen time is cut in half on Thursday morning.

I'm in some sort of domestic bliss this evening because I got a Bob's Red Mill catalog in the mail. I have no idea how they got my name and address (though I suspect it is from the Vegetarian magazine subscription I have), but I'm thrilled to receive information on the lovely whole grain mixes they have. I just ordered some Scottish oatmeal, buttermilk biscuit mix, and ten grain pancake mix. Obviously, I am going to have a super delicious series of breakfasts coming up next month. Separation anxiety has grabbed hold of me. I dropped my beloved wool pea coat off at the dry cleaners today. I swindled my way into picking it up tomorrow at 5:00, even with all the holiday rush to the cleaners. I miss my coat already. It's so damn cold outside without it.

In a perfect world, the boss would call tomorrow afternoon and tell me I can lock the office up early. She's going to be in El Paso for the next few days, and I really don't want to stay the entire day when the long weekend is coming up.

EDIT: Holy crap, there is a ghost loose in Santa Fe, and he's threatening people with a gun.
